Ingredients
- 6 skinless, boneless chicken breast halves - cut into 1/2 inch strips
- 1 egg, beaten
- 1 cup buttermilk
- 1 1/2 teaspoons garlic powder
- 1 cup all-purpose flour
- 1 cup seasoned bread crumbs
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 quart oil for frying
Directions
- Place chicken strips into a large, resalable plastic bag. In a small bowl, mix the egg, buttermilk and garlic powder. Pour mixture into bag with chicken. Seal, and refrigerate 2 to 4 hours.
- In another large, resalable plastic bag, mix together the flour, bread crumbs, salt and baking powder. Remove chicken from refrigerator, and drain, discarding buttermilk mixture. Place chicken in flour mixture bag. Seal, and shake to coat.
- Heat oil in a large, heavy skillet to 375 degrees F (190 degrees C).
- Carefully place coated chicken in hot oil. Fry until golden brown and juices run clear. Drain on paper towels.
Buffalo Chicken Wings

Ingredients
- 1 quart vegetable oil for deep frying
- 24 chicken wings, tips removed and wings cut in half at joint
- 4 tablespoons butter
- 1 tablespoon distilled white vinegar
- 5 tablespoons hot pepper sauce
- salt and pepper to taste
Directions
- Heat the oil In a large skillet or deep fryer to 375 degrees F (190 degrees C). Deep fry chicken wings in oil until done, about 10 minutes. Remove chicken from skillet or deep fryer and drain on paper towels.
- Melt the butter in a large skillet. Stir in the, vinegar and hot pepper sauce. Season with salt and pepper to taste. Add cooked chicken to sauce and stir over low heat to coat. The longer the wings simmer in the sauce, the hotter they will be. Serve warm.
Game Day Nachos

Arrange and bake these nachos on an ovenproof platter or shallow baking dish, or use several smaller baking dishes or ovenproof plates.
Ingredients:
- 1 pound lean ground beef
- 1 cup chopped onion
- 1/2 green bell pepper, chopped, optional
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1 can (16 ounces) refried beans
- 1 can (8 ounces) tomato sauce
- salt and freshly ground black pepper, to taste
- Tortilla chips, 1 large bag
- 2 plum tomatoes, diced
- 4 green onions, thinly sliced
- jalapeno pepper rings or diced jalapeno peppers
- 3 to 4 cups shredded Cheddar and Monterey Jack cheese blend

- salsa
- guacamole
Preparation:
Heat oven to 375°. F.
Spread some of the beef and bean
mixture on each chip and arrange the chips in a single layer on
the large baking dish or ovenproof plate, or use smaller
ovenproof plates or dishes. Sprinkle the layer with a little of
the diced tomato, sliced green onions, and jalapeno peppers.
Sprinkle each chip with some of the cheese and make another layer
of chips. Repeat with the tomato, green onions, peppers, and top
with more cheese. Bake for 8 to 12 minutes, until the cheese is
melted and bubbly.
Makes enough for 6 to 8 people.

- 2 quarts vegetable oil for frying
- 1 large egg
- 1 cup milk
- 2 teaspoons vegetable oil
- 1 cup pancake mix
- 1 (18 ounce) package cream-filled chocolate sandwich cookies (such as Oreo®)
Directions
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Whisk together the egg, milk, and 2 teaspoons of vegetable oil in a bowl until smooth. Stir in the pancake mix until no dry lumps remain. Dip the cookies into the batter one at a time, and carefully place into the hot frying oil. Fry only 4 or 5 at a time to avoid overcrowding the deep fryer. Cook until the cookies are golden-brown, about 2 minutes. Drain on a paper towel-lined plate before

Ingredients
- 1 pound ground beef chuck
- 1 (8 ounce) package shredded Cheddar cheese
- 1 tablespoon mayonnaise
- 1 (1 ounce) package dry onion soup mix
- 24 (2 inch square) dinner rolls, split
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, thoroughly mix ground beef chuck, Cheddar cheese, mayonnaise and dry onion soup mix.
- Spread even amounts of the ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. If you purchased the rolls in aluminum foil pans, you may return them to the same pan for baking. Otherwise, place them on a baking sheet or baking pan. Cover the pan tightly with aluminum foil.
- Bake for 30 to 35 minutes in the preheated oven, or until meat is cooked
Super Bowl Salsa Mix

"Great make-ahead-of-the-game dip! Cheesy (with some surprises), and served with tortilla chips. Keep hot in a slow cooker to last all afternoon and free yourself to watch the game. Always disappears quickly! Can be served in individual dip bowls with tortilla chips, or over a handful of chips in a bowl."

Ingredients
- 1 (2 pound) loaf processed cheese, cubed
- 1 cup milk
- 1 (12 ounce) package ground pork sausage
- 1 white onion, chopped
- 1 (24 ounce) jar medium salsa
- 1/2 (15 ounce) can black beans, drained and rinsed
- 1 bunch green onions, chopped
- 1 (12 ounce) package tortilla chips
Directions
- In a slow cooker set to high heat, place the processed cheese and milk. Cover and, stirring occasionally, cook until the cheese has melted and is well blended with the milk.
- Place ground pork sausage in a medium skillet. Cook over medium high heat until evenly brown. Mix in white onion. Cook and stir until onion is translucent. Remove from heat and drain.
- Stir sausage mixture into the cheese mixture. Reduce heat to low. Mix in salsa and black beans. Continue cooking, stirring occasionally, approximately 1 hour.
- Garnish with green onions and serve with tortilla chips.
